Dies the Fire by SM Sterling
World War Z by Max Brooks(technically a horror novel, but it has enough SF elements IMO)
Midnight Mass by F. Paul Wilson(same as above, but its pretty dammm apocalyptic!)
Lucifer's Hammer by Larry Niven & Jerry Pournelle
Dr Strangelove(actually a pre-apolcalypse film, but a good way to start)
The Road Warrior

A Boy and his Dog
The Time Machine(debatable if it belongs here, but its a good movie)
